I like playing the latest guilty gear, but it doesn't support crossplay on Xbox. Share some of your favorite fighting games that do.

Just go with Mortal Kombat 11. You won't find a better fighting game. And I am not talking about the fact that it looks cool- I talk about the fact that it is mechanically deep. There's an article for you. Is Mortal Kombat 11 cross-platform? Read it. You will be convinced to try it.
